Ginger Beef Yakisoba Stir Fry

Here’s a great way to use those Yakisoba packs from the refrigerated section!

What You’ll Need

  • 1 lb ground beef or other ground meat

  • 8 oz coleslaw cabbage mix

  • 2 ribs celery, sliced thinly 

  • 1 thumb grated ginger

  • 2 cloves garlic

  • 3 mini packages par-cooked Yakisoba noodles with spice packets (one whole pack)

How to Make It

  1. Brown and crumble ground beef in a large skillet or wok over high heat. 

  2. When beef is almost done, add ginger and garlic and sauté for a couple of more minutes to infuse their flavor into the beef. 

  3. With a slotted spoon, remove the meat to a bowl and set aside. 

  4. Use the remaining oil in the skillet from the meat, stir fry the cabbage mix and celery until it begins to soften. 

  5. While the cabbage is cooking, prepare the packages of noodles according to package instructions to soften them. 

  6. Open the packages of seasoning, one over the meat, one over the cabbage, and then add the noodles to the skillet with the final package of seasoning and 12 oz water. 

  7. Stir these around together to mix well, then add meat and continue to mix.

  8. Continue stirring and frying over high heat until the liquid has reduced and everything looks just right.

  9. Optional: While the stir fry is finishing up, make a sriracha mayo by stirring together a few tablespoons mayo, a few squirts of sriracha, and a splash of rice vinegar. Add a tiny bit of sugar, if desired.
