Summer Garden Pasta Salad
This colorful pasta salad is perfect for warm summer days when the AC goes out and you refuse to turn the oven on. I even found some precooked microwave pasta at birch recently that could be a good substitute for dry pasta. It’s easy to customize with whatever you have on hand. Add cheese, pepperoni, olives, or your favorite vegetables to make it your own. Make it ahead of time and let it chill in the refrigerator for an even better flavor. Serve it as a side dish for a barbecue or enjoy it as a light lunch all by itself!
What You’ll Need
1 box rotini pasta
1 cucumber, diced
2 tomatoes, diced
1 bell pepper, diced
½ red onion, diced
½ bottle Italian dressing
Optional: cheese cubes, pepperoni, black olives, can of beans
How to Make It
Cook pasta and rinse under cold water.
Mix in vegetables.
Toss with dressing.
Chill before serving.
