Banana Bread Baked Oats

A simple hands-off breakfast that feeds a crowd. These delicious oats are packed with healthy fiber & protein to kick start your day.

What You’ll Need

  • 1 ⅓ cups milk of choice

  • 2 eggs, whisked

  • ⅓ cup maple syrup, honey or brown sugar

  • ¼ cup butter, melted and cooled

  • 1 cup mashed ripe bananas

  • 1 teaspoon vanilla extract

  • 3 cups rolled oats (not quick oats)

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • ¼ teaspoon kosher salt

  • Optional: ½ cup chopped nuts, chocolate chips, or dried fruit

How to Make It

  1. Preheat oven to 350 F.

  2. Grease an 11x7, 9x9 pan, or 3 quart casserole dish.

  3. Mix milk, eggs, melted butter, syrup/sugar and vanilla in a large bowl. Stir in bananas, then add oats, baking powder, cinnamon and salt.

  4. Mix well, then fold in nuts/chocolate/fruit if using. Pour immediately into prepared baking dish and bake for 25-30 minutes.

  5. Allow to cool for ~10 minutes before serving. Serve topped with peanut butter, greek yogurt, milk of choice or just as-is!
