Turkey & Vegetable Burgers
Stretch a pound of ground turkey into delicious (and healthy) burgers, packed with veggies and flavor. No dry burgers in sight!
What You’ll Need
1 lb ground turkey
1 medium carrot, grated
½ onion, finely diced or grated
½ bell pepper (red, orange or green)
1 garlic clove, minced
1 Tablespoon each prepared ketchup & bbq sauce
Kosher salt & black pepper, to taste
2 Tablespoons olive oil, divided
How To Make It
Heat a large skillet over medium heat. Add 1 Tablespoon olive oil to the skillet and then the carrot, onion, pepper and garlic. Season with salt & pepper. Cook, stirring frequently, until vegetables are soft but not browned. Remove from heat.
Place ground turkey into a mixing bowl. Add in ketchup, bbq sauce, salt & pepper, and cooked vegetables. Mix well, until the vegetables are evenly distributed. Set aside.
Wipe skillet clean, return to medium heat and add remaining Tablespoon of oil to pan. Scoop 4 balls of turkey mixture directly onto hot pan and press gently with a spatula to form patties. Cook undisturbed on each side for 2-3 minutes, or until the patty releases from the pan easily. Flip and cook until internal temperature reaches 165 F. Cook remaining 4 patties and serve immediately with your favorite burger toppings!
