Shortcake Biscuit Bites

This dessert is easy, delicious, and made with ingredients you can find at Birch. Fluffy biscuits are filled with warm, cinnamon-spiced apples and fresh strawberries mixed with whipped cream for a sweet, cozy treat. Mini biscuits work perfectly, and you can adjust the fruit and sweetness to your taste.

It’s a fun, simple way to make something homemade, share a treat with family or friends, and enjoy a little indulgence without a lot of fuss.


What You’ll Need

  • 1 can refrigerated biscuits (mini or regular)

  • 1–2 cups whipped cream (Cool Whip or homemade)

  • 1–2 cups strawberries, chopped

  • 2 apples, chopped

  • ¼ cup brown sugar

  • 1 tbsp cinnamon

  • 2 tbsp butter, melted


How To Make It

  1. Preheat oven to 350°F.

  2. Combine apples, brown sugar, cinnamon, and melted butter. Toss well.

  3. Bake apples for 20–25 minutes until soft and caramelized.

  4. Bake biscuits according to package directions. (I found mini ones at birch and combined 4 mini biscuits together to make a larger biscuit). 

  5. Slice biscuits open once cool. 

  6. Mix whipped cream with strawberries in one bowl and warm cinnamon apples with whip cream in another bowl. 

  7. Spoon mixture into biscuits and serve.
