Turkey Sweet Potato Bowl

This one is easy, filling, and very “throw it together with what’s in the fridge.” A warm roasted sweet potato gets mashed up with salty smash-burger-seasoned turkey and melty cheddar for a sweet-and-savory dinner that actually keeps you full!

What You’ll Need

  • 1 large sweet potato

  • Coconut oil, for coating

  • Salt, to taste

  • 8 oz ground turkey

  • Smash burger seasoning, to taste

  • Shredded cheddar cheese measure with your heart

  • Shredded lettuce, optional but recommended

  • Thousand Island dressing, for drizzling

How To Make It

  1. Roast the sweet potato. Heat the oven to 400°F. Cut the sweet potato in half lengthwise and rub the cut sides with a little coconut oil.

  2. Place on a baking sheet and roast for about 40 minutes, or until completely soft and easily pierced with a fork.

  3. While the potato cooks, brown the ground turkey in a skillet over medium heat. Season generously with smash burger seasoning and cook until completely cooked through.

  4. Scoop the sweet potato into a bowl. You can remove the skin like I did, or leave it on. Sprinkle with salt and lightly mash it, leaving a little texture.

  5. Spoon the seasoned turkey over the sweet potato and immediately top with shredded cheddar so it gets nice and melty.

  6. For the full animal-style version, pile on shredded lettuce and drizzle with Thousand Island dressing.

  7. Grab a fork and get a little bit of everything in each bite. This would also be really good with diced pickles, caramelized onions, or a sprinkle of sesame seeds on top if you want to lean even harder into the cheeseburger vibe.
