Turkey Sweet Potato Bowl
This one is easy, filling, and very “throw it together with what’s in the fridge.” A warm roasted sweet potato gets mashed up with salty smash-burger-seasoned turkey and melty cheddar for a sweet-and-savory dinner that actually keeps you full!
What You’ll Need
1 large sweet potato
Coconut oil, for coating
Salt, to taste
8 oz ground turkey
Smash burger seasoning, to taste
Shredded cheddar cheese measure with your heart
Shredded lettuce, optional but recommended
Thousand Island dressing, for drizzling
How To Make It
Roast the sweet potato. Heat the oven to 400°F. Cut the sweet potato in half lengthwise and rub the cut sides with a little coconut oil.
Place on a baking sheet and roast for about 40 minutes, or until completely soft and easily pierced with a fork.
While the potato cooks, brown the ground turkey in a skillet over medium heat. Season generously with smash burger seasoning and cook until completely cooked through.
Scoop the sweet potato into a bowl. You can remove the skin like I did, or leave it on. Sprinkle with salt and lightly mash it, leaving a little texture.
Spoon the seasoned turkey over the sweet potato and immediately top with shredded cheddar so it gets nice and melty.
For the full animal-style version, pile on shredded lettuce and drizzle with Thousand Island dressing.
Grab a fork and get a little bit of everything in each bite. This would also be really good with diced pickles, caramelized onions, or a sprinkle of sesame seeds on top if you want to lean even harder into the cheeseburger vibe.
