Loaded Sheet Pan Quesadillas

This is a fun take on quesadillas for a crowd! We utilized those wonderful massive tortillas often found in the warehouse, and a couple of oiled sheet pans (one oiled on the bottom!) to create this yummy, crispy, tasty weeknight meal.

What You’ll Need

  • 1 lb ground beef or turkey

  • 1 diced white onion

  • 2 tbsp taco seasoning

  • ½ cup water

  • 1 can black beans, drained and rinsed

  • 1 can of corn, drained and rinsed

  • ¼ cup salsa

  • 8 large burrito-sized tortillas

  • 1 ½ cups colby jack and cheddar cheese, or any type you prefer

How to Make It

  1. Preheat oven to 425℉.

  2. In a skillet over medium heat, cook ground beef and onion completely through and remove any excess grease.

  3. Add in taco seasoning and 1/2 cup water. Stir together and bring to a simmer for about 1-2 minutes.

  4. Add in black beans, corn, and salsa. Combine and remove the pan from heat.

  5. On a greased sheet pan, place 6 tortillas with about 1/3 of the tortilla hanging off the pan. Now place a tortilla in the center.

  6. Pour the cooked meat into the center of the tortillas and spread evenly. Top with cheese and green onion.

  7. Place a tortilla on top in the center, and fold over the first layer of tortillas one by one to completely cover the top of the quesadilla.

  8. Spray the bottom side of the second sheet pan and place on top of the giant quesadilla with light pressure applied.

  9. Bake for 20 minutes, with the second pan on top. After 20 minutes, remove the top pan and broil for an additional 1 – 3 minutes until desired crispness is achieved.
