Homemade Granola
Homemade granola is so delicious, plus you can customize the flavor to your liking. It also tends to be lower in refined sugar and oils than store bought. Use any combination of nuts & seeds. Add your favorite dried fruit (or don’t!) and tailor the spices to your unique palate.
What You’ll Need
3 cups old fashioned rolled oats
2 cups almonds, pecans or walnuts roughly chopped
½ cup pepitas
1 teaspoon salt 2 teaspoons cinnamon ½ teaspoon ground cardamom or ginger
⅓ cup melted butter, coconut or avocado oil
⅓ cup pure maple syrup or honey
1 teaspoon vanilla extract
⅔ cup dried cranberries, cherries, dates (chopped) or raisins
How To Make It
Line a large sheet pan with parchment paper and preheat oven to 350 F.
Add oats, nuts, seeds, salt and spices to a large bowl. In a separate bowl mix together melted butter/oil, maple syrup and vanilla. Pour over the oat mixture and mix well. Allow to sit covered for ~10 minutes while the oven preheats.
Arrange granola mixture onto sheet pan in an even layer. Press mixture together so it can form clumps in the oven.
Bake for 20 minutes, then carefully stir by flipping chunks over with a spatula. Press the granola back down in to an even layer to encourage clumping.
Bake for another 5-10 minutes, until the mixture is 95% dry and golden. Allow to cool completely before adding in dried fruit. Store in an airtight container for up to two weeks.
