Spaghetti Carbonara

We had some bacon pieces to use up, a bunch of radiatore pasta, and tons of eggs and sour cream after this week’s shop. I threw in some peas to cook with the pasta during the last few minutes to add a little more protein. It all came together in 15 minutes!

What You’ll Need

  • 1 lb spaghetti

  • 1 small onion, chopped

  • 1 tablespoon olive oil

  • 8 oz bacon, sliced

  • 2 egg yolks

  • 8 oz sour cream

  • Parmesan

How to Make It

  1. Boil the pasta in salted water according to the instructions on the package.

  2. Meanwhile, heat up the olive oil in a large pan and fry the onion until it softens. Add bacon and fry until it gets brown.

  3. In a separate bowl, mix the egg yolks with the sour cream and let the mixture rest.

  4. Drain the pasta, reserving 1 cup or so of the pasta water. Add the pasta to the pan with the bacon mixture. Pour the egg yolks and sour cream mixture over them. The heat from the pasta and the bacon mixture will cook the egg yolk mixture enough so that you will have a creamy sauce. Add Parmesan and serve.
