Sausage and Peppers Pasta

A twist on classic sausage & peppers. This hearty dinner uses already-cooked sausage and sweet bell peppers plus penne for a quick & easy dinner made with items often available at Birch!

What You’ll Need

  • 1 lb penne pasta

  • 4 pre-cooked smoked sausages

  • 2 bell peppers, sliced

  • 2 garlic cloves, thinly sliced

  • 2 Tablespoons olive oil

  • Salt & pepper, to taste

  • Parmesan cheese & red pepper flakes, for serving

How to Make It

  1. Bring a large pot of salted water to a boil. Cook penne according to package instructions (~11 minutes for al dente)

  2. While the pasta cooks, heat a large skillet over medium-high heat. Add olive oil, bell peppers, sausage and garlic.

  3. Saute, stirring occasionally, allowing the peppers to soften and brown slightly and the sausage to brown and crisp up. Season with salt and pepper.

  4. After draining the pasta, toss the sausage and peppers mixture with the pasta, adding a little more oil if needed. Serve immediately, topped with Parmesan cheese and (optional) red pepper flakes.
