Mini Bagel Pizzas

This isn’t really a “recipe” so much as an easy idea using everyday Birch staples. It’s one of those throw-together snacks that comes from working with what we have often at Birch - bagels, a little sauce, and extra veggies like zucchini. Simple, flexible, and perfect for feeding kids quickly without overthinking it!

What You’ll Need

  • Base:

    • 4–6 bagels (halved)

  • Pesto Bagels:

    • 2–3 tbsp pesto

    • 1/2–1 cup cottage cheese

    • Italian seasoning 

  • Tomato and Cheddar Bagels:

    • 1/2–1 cup pizza sauce

    • 1/2 cup zucchini (blended into sauce)

    • 1–1.5 cups shredded cheddar cheese

How to Make It

  1. Preheat oven to 375°F

  2. Prep bagels: Slice and place on a lined baking sheet.

  3. Make the pesto side: Spread pesto on bagel halves. Top with cottage cheese. Sprinkle Italian seasoning

  4. Make the Cheddar side: Mix blended zucchini into pizza sauce. Spread onto bagels. Top with shredded cheddar cheese.

  5. Bake for 8–12 minutes until cheese is melted & edges are lightly toasted.

  6. Let cool slightly and serve!
