Layered Cheesecake Yogurt Parfait
This was my middle of the night pregnancy snack for a solid 2 weeks. Super filling and dessert forward. Fluffy cheesecake-flavored Greek yogurt gets layered with crunchy peanut butter granola and fresh banana, then topped with melted chocolate that hardens into a crackly little shell in the fridge which is my absolute favorite!
What You’ll Need
2 cups vanilla Greek yogurt
3 tablespoons cheesecake instant pudding mix
1/2 cup peanut butter granola
1 banana, sliced
¼ cup chocolate chips
Optional: 1 teaspoon coconut oil or butter, for smoother melted chocolate
Optional: pinch of flaky salt
How to Make It
Make it fluffy. Add the Greek yogurt and cheesecake pudding mix to a bowl. Beat with a hand mixer or whisk really well until the mixture becomes smooth, thick, and fluffy.
Start layering. Add a layer of peanut butter granola to the bottom of a glass, jar, or bowl.
Spoon some of the cheesecake yogurt mixture over the granola, then add a layer of sliced banana. Repeat the layers if your container allows.
Make the chocolate shell. Melt the chocolate chips in the microwave in 15–20 second bursts, stirring between each, until smooth. Stir in a little coconut oil or butter if you’d like it thinner.
Pour or drizzle the melted chocolate over the top, spreading it into a thin layer.
Pop it into the fridge for 5–10 minutes, or until the chocolate has hardened.
Crack through that chocolate top with your spoon and dig in!
