High Protein Cottage Cheese Blender Breakfast Muffins
This is a great way to use those oats that are almost always in the warehouse! I always double this recipe to meal prep them, and then by the time they have cooled down, my kids have eaten them all! They are a winner!
What You’ll Need
3/4 cup cottage cheese
2 large eggs
1/4 cup maple syrup
2 teaspoons vanilla extract
1 ripe banana
1/4 cup olive oil
1 3/4 cups oat flour (I usually grind old fashioned oats in my blender before proceeding with the recipe, and if I grind more than I need, I save them in a container for the next batch)
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
1/2 cup chocolate chips plus additional for topping
How to Make It
1. Preheat the oven to 350. Line a muffin tin with silicone or parchment paper liners, or spray with cooking spray, and set aside.
2. In a blender, add cottage cheese, eggs, maple syrup, vanilla, banana, and olive oil. Blend until well combined.
3. Add the oat flour, baking powder, baking soda, cinnamon, salt, and chocolate chips to the blender. Fold ingredients in gently, using a spoon or spatula, until just combined. Do not over-mix.
4. Divide the batter evenly between the lined muffin tins, topping with more chocolate chips if desired.
5. Bake for 22-25 minutes, or until a toothpick inserted in the center comes out clean.
6. Allow muffins to cool 5-10 minutes in the pan then transfer to a cooling rack to cool completely.
