Caramelized Zucchini Pasta

Is there anything more comforting than a big bowl of pasta?Zucchini and garlic caramelize into a delightful “sauce” that is complex, creamy, and enjoyable for the whole family.

What You’ll Need

  • 2 lbs grated zucchini

  • 3 cloves garlic, minced

  • 1 lb pasta of choice

  • 4 Tablespoons butter, divided

  • ½ cup shredded parmesan or asiago

  • 2 Tablespoons fresh basil, chopped

  • Crushed red chili flakes (optional)

  • Kosher salt & freshly ground pepper, to taste

  • Extra basil and cheese for serving

How to Make It

  1. Cook pasta according to package directions. Make sure to salt the water generously, and reserve 1 cup pasta water.

  2. While the pasta boils, melt 1 Tablespoon butter in a large skillet over medium heat. Add zucchini and garlic and cook, stirring constantly until all the water evaporates and the zucchini becomes concentrated and starts to caramelize. Continue cooking, stirring constantly, until the zucchini starts to become soft and almost forms a paste.

  3. Add reserved pasta water to zucchini, a few splashes at a time, and stir to incorporate. Add the grated cheese and basil and remaining 3 Tablespoons of butter. Continue adding water a splash at a time until you have a glossy, slightly thick sauce. Season to taste with salt & pepper.

  4. Toss pasta with caramelized zucchini sauce, adding additional pasta water as necessary.

  5. Serve immediately topped with more cheese, extra basil, and (optional) red chili flakes.
