California Veggie Sandwich

Hearty enough for an easy dinner, and perfect for a not-so-sad desk lunch–this sandwich uses a whole host of fresh veggies and whole grain bread for an extra kick of protein. Tasty, healthy, filling!

What You’ll Need

  • 2 slices whole grain bread, lightly toasted (I love Dave’s Good Seed for this)

  • ¼ cup farmer’s cheese, cream cheese, or hummus

  • ¼ cup thinly sliced cucumber

  • ¼ cup thinly sliced red or orange bell pepper

  • ¼ cup lettuce or micro greens

  • 1 Tablespoon pickled red onions or beets

  • ½ avocado, sliced

  • Drizzle of olive oil

  • Salt & pepper, to taste

How to Make It

  1. Build the sandwich by spreading hummus and/or cheese on both slices of toasted bread. Layer avocado on one slice and press gently with a fork, then drizzle gently with olive oil and season with salt & pepper.

  2. Layer the rest of the toppings on the second slice of bread, starting with the peppers and ending with the lettuce/greens.

  3. Sandwich both sides together, inserting one toothpick in each half before cutting. This sandwich gets a little messy, so the toothpicks are essential!

Tips

  • If you’re taking this to work where you have access to a kitchen, bring the bread and toppings separately and assemble right before eating.
