Authentic Hawaiian Mac Salad
We love to make and serve this alongside Hawaiian Shoyu Chicken in the style of a favorite Hawaiian restaurant we loved in college!
What You’ll Need
1 lb macaroni or other pasta
2 Tbsp apple cider vinegar
2 carrots, shredded/grated
1/4 onion, shredded/grated
2 1/2 cups mayonnaise
1/4 cup milk
2 teaspoons sugar (optional)
Salt and pepper to taste
How to Make It
Cook pasta according to package instructions, drain and rinse under cool water until completely cool. Drain well and place in a large bowl.
Sprinkle on vinegar. Add carrot and onion and toss together well. Refrigerate while you prepare the dressing.
In a separate, small bowl, whisk together mayo, milk, and sugar. Fold into macaroni mixture until well combined. Taste for seasonings and add salt and pepper as needed.
Cover and refrigerate for 4 hours. Gently stir before serving, adding a splash of milk if needed for desired consistency. Serve with your favorite Hawaiian main dish!
