Authentic Hawaiian Mac Salad

We love to make and serve this alongside Hawaiian Shoyu Chicken in the style of a favorite Hawaiian restaurant we loved in college!

What You’ll Need

  • 1 lb macaroni or other pasta

  • 2 Tbsp apple cider vinegar

  • 2 carrots, shredded/grated

  • 1/4 onion, shredded/grated

  • 2 1/2 cups mayonnaise

  • 1/4 cup milk

  • 2 teaspoons sugar (optional)

  • Salt and pepper to taste

How to Make It

  1. Cook pasta according to package instructions, drain and rinse under cool water until completely cool. Drain well and place in a large bowl.

  2. Sprinkle on vinegar. Add carrot and onion and toss together well. Refrigerate while you prepare the dressing.

  3. In a separate, small bowl, whisk together mayo, milk, and sugar. Fold into macaroni mixture until well combined. Taste for seasonings and add salt and pepper as needed.

  4. Cover and refrigerate for 4 hours. Gently stir before serving, adding a splash of milk if needed for desired consistency. Serve with your favorite Hawaiian main dish!
