Sticky Toffee Date Oats
More oats! These sticky toffee date oats are creamy, lightly spiced, naturally sweetened with dates, and finished with a peanut butter drizzle that tastes like caramel. These oats are filling, naturally sweet, and made from simple pantry ingredients that show up often at Birch!
WHAT YOU’LL NEED
Base Oats:
½ cup rolled oats
1 tbsp chia seeds
3 soft Medjool dates, finely chopped
¾ cup milk of choice
¼ tsp cinnamon
½ tsp vanilla
Pinch of salt
Pinch of ground ginger (optional)
Chunky Peanut Butter Drizzle:
1 tbsp chunky peanut butter
1 tbsp maple syrup
1–2 tbsp milk (to thin)
Pinch of salt
Dash of cinnamon
How To Make It
Base Oats:
Mix all ingredients in a bowl or jar.
Stir well so the chia seeds are evenly distributed.
Refrigerate overnight (or at least 2 hours). The chia seeds help thicken the oats into a pudding like texture while the dates soften and melt into the mixture.
Drizzle:
Stir together until smooth and pour-able.
Drizzle over oats just before serving. The maple syrup + peanut butter combination creates that caramel/toffee flavor without needing brown sugar or butter.
Pantry Swaps
No dates? Use raisins instead!
No peanut butter? Any nut or seed butter works or mash an extra date with a splash of milk for a simple date sauce!
No maple syrup? Honey works just fine!
Want it warm? Heat the oat mixture gently on the stove-top with a splash of extra milk until warmed through, then drizzle with the peanut butter sauce.
