Marinated White Beans
These marinated white beans are a super easy, flavorful snack or topping. With just a few simple ingredients from Birch, they soak up a garlicky, herby, tangy dressing and taste great on toast, with crackers, or tossed into a salad.
Here’s how we create this tasty treat:
What You’ll Need
1 can white beans, drained
1 clove garlic, minced OR 1 small shallot, finely diced
¼ cup olive oil
2 Tablespoons nice red wine or champagne vinegar
Pinch of sugar or teaspoon of honey
Any fresh herbs such as oregano, parsley, mint, rosemary, tarragon,basil-finely diced
Kosher salt & black pepper, to taste
How To Make It
Combine garlic/shallot, oil, vinegar, herbs, sugar/honey and salt & pepper in a 16 oz mason jar or resealable container. Whisk until combined.
Add white beans to the jar, top securely with a lid, and gently shake until the beans are coated.
Allow the beans to marinate in the fridge for 1 hour and up to 24 hours before using.
Spoon them on to freshly toasted sourdough, eat with crackers, or use them to top (and dress) a green salad alongside your favorite toppings.
