Instant Pot Italian Sausage & Vegetable Soup
I made this with some Jennie-O turkey sausage slices that I wasn’t sure what to do with. We almost always have zucchini and soup veggies at Birch, so this came together super easily!
What You’ll Need
1 lb Italian sausage, mild or spicy
1 yellow onion, diced
2 large carrots, sliced
2 stalks celery, sliced
1 medium zucchini, sliced
1 14oz can diced tomatoes (I love fire roasted!)
1 15oz can of cannellini beans, drained (I was out so I used French cut green beans!)
4 cups chicken broth
1 tbsp minced garlic
1/2 tsp salt
1/8 tsp black pepper
1 tsp Italian seasoning
How To Make It
Turn your instant pot to sauté mode and sauté sausage with onion until browned.
Add remaining ingredients and stir. Press cancel to stop sauté function. Close lid, set vent to sealing, and cook on manual setting high pressure for 4 minutes. When cycle is complete, quick release the pressure, taste for seasonings, and serve!
