Egg Bites

A simple, protein-packed breakfast that’s easy to customize with whatever you have on hand. These savory egg bites combine creamy cottage cheese, salty prosciutto, and fresh veggies for a fluffy, flavorful bite. Perfect for meal prep or busy mornings!

What You’ll Need

  • 1–2 cups liquid eggs

  • 6–10 slices prosciutto

  • ½–1 cup shredded cheese

  • 1/2 cup cottage cheese 

  • Salt + pepper (light—prosciutto is salty)

  • Optional add-ins: chopped spinach, diced zucchini, bell peppers, leftover potatoes

How to Make It

  1. Preheat oven to 375 °F

  2. Grease a muffin tin (or use liners)

  3. Blend the liquid egg and cottage cheese together

  4. Add in chopped prosciutto and veggies

  5. Pour into muffin tin 

  6. Bake 15-20 mins until set 

Tips

  • To make them more “steamed” like Starbucks style, place a pan with boiling water on the bottom rack of your oven when cooking.
