Denver Baked Omelet with Apple Gruyere Salad

What You’ll Need
Denver Baked Omelet:
1 tablespoon oil
1/4 medium onion, chopped
1/2 cup mushrooms, chopped
1/2 green bell pepper, chopped
1 cup chopped ham
6 large eggs, beaten
Apple Gruyere Salad:
2 tablespoons balsamic vinegar
1/2 teaspoon dried tarragon
Salt and pepper to taste
1/4 cup olive oil
1 head butter lettuce, washed and chopped
2 medium apples, any kind, cored and chopped
1/2 cup small cubed gruyere cheese
1/3 cup chopped, slivered, or sliced almonds
1/4 cup finely chopped red onion
How to Make It
Denver Baked Omelet:
1. Preheat oven to 425. Grease a 9-inch pie plate.
2. In a large nonstick skillet, heat the oil over medium-high heat. Add the onion and mushrooms and cook until the onions start to turn translucent and the mushrooms begin losing their liquid, about 5 minutes.
3. Add the bell pepper and ham. Continue cooking until the pepper has softened and the ham is hot, about 5 minutes.
4. Transfer the ham and vegetable mixture to the prepared pie plate. Pour the eggs over top and bake until set, 10-12 minutes.
Apple Gruyere Salad:
1. In a small jar or bowl, combine the balsamic vinegar, tarragon, and salt and pepper to taste. Cap the jar and shake, or whisk to combine. Add the olive oil and shake or whisk again. Alternatively, use a pre-made mediterranean or tarragon dressing, about 4-6 tablespoons.
2. Place the butter lettuce in a large salad bowl. Toss it with enough dressing to coat.
3. Divide the dressed greens among plates. Top each plate with an equal portion of the apple, cheese, almonds, and red onion. Serve with additional dressing on the side.
