White Bean Soup with Radicchio & Pesto

Shopping at Birch can take some adjusting. One of the hurdles we hear some of our participants have is how to use food items/products. To inspire you in the kitchen as you make delicious meals for your family (using your BCS items), we will be sharing simple recipes or ideas. This week’s delicious winter soup inspiration comes from Sarah, a faithful BCS participant. In fact, she even wrote up a fantastic description so without further adieu…
 
Sarah’s Simple White Bean Soup with Radicchio and Pesto
 
“When BCS life gives you lemons (and gigantic cans of gorgeous Italian butter beans, extra virgin olive oil, hot sauce, and thyme), make a pot of White Bean Soup with Radicchio and Pesto.
 
Next thing is to drop off bowls to those who could use a little savory sunshine, but be sure to save the last sumptuous sips just for you! It’s garlicky and lemony and nutritional and a cinch to prepare.
 
5 bowls, 4 of the bowls have white bean soup with a pinch of radicchio and pesto on top. The last bowl has pesto and a spoon inside it.
 
 
For those interested in making this, 1/2 the cooked beans are cooked in stock or water until blendable.
A large can of Rega brand butter beans.
 
 
The rest of the beans are added to the pot with the blended mixture for texture.
 
A bottle of olive oil, a bowl of lemons and a pot overflowing with butter beans.
 
Use lots of lemon zest and juice and garlic sautéed in olive oil, plus salt and pepper. Sauteed leeks or onions are a plus but you can skip. Easy—and infinitely customizable. Fresh warm croutons are insanely delicious alongside.
