How to Use Citrus to Bring Sunshine Home

February is not typically filled with sunshine and rainbows, but thankfully nature brings us another variety of sunshine in the form of citrus fruit! Packed with Vitamin C, citrus can be enjoyed as more than just a quick snack — it’s delightful added to fresh greens or grains with nuts and a quick vinaigrette.

You can often find a high-quality vinaigrette during your shop each week or make your own using olive oils and kinds of vinegar (also found in the warehouse). You don’t need to be a master chef to create something delicious.

It’s as easy as 3 to 1! Just add roughly 3 parts olive oil to 1 part vinegar to a jar or container with a lid. We like to add a half teaspoon of mustard, a tiny bit of fresh or dried garlic, and a pinch of salt and pepper. Then shake vigorously for 15 seconds (or find a nearby helper that needs to get some wiggles out and have them shake it for you, just be sure it isn’t glass if you are enlisting a little helper).

Enjoy with a lettuce leaf or carrot dipped into your homemade dressing. You can adjust the oil or vinegar to taste and then give one last shake. 
 
Now for the sunshine…add some freshly squeezed citrus fruit juice in place of the vinegar (or in addition) and a touch of half and a half or cream if you’d like a richer dressing.
 

Voila! A sunny citrus fruit salad dressing the whole family will love.
